IMG_3670Squash Blossom, Tomato & Ricotta Pizza

Chef Clyde has been testing out the new pizza oven at the farm kitchen with some wonderful pizza recipes for guests. I even had the chance to test out this yummy squash pizza and you might not have a wood-fire oven but I promise it will be a perfect pizza to end your day!

  • 10-12 squash blossoms
  • 1 – 8oz round of pizza dough (your favorite recipe)
  • 1 tablespoon extra virgin olive oil
  • 1⁄4 cup tomato sauce (pomodoro or your favorite sauce)
  • 4 oz ricotta or burrata cheese
  • Freshly ground black pepper
  • Kosher salt

Preheat oven or pizza stove to 500°

Prepare and stretch the dough on cornmeal-dusted pizza peel

Brush the rim of dough with olive oil and season surface with salt

Ladle and spread the sauce evenly over the surface of pizza leaving an inch rim

Lay the squash blossoms in a circle over surface of pizza

Be sure to open blossoms and remove stamens

Slide pizza into oven and bake 8-10 minutes until crust is golden brown

Remove from the oven and cut into quarters

Place cheese on each segment

Drizzle with olive oil and grind black pepper over it
