Sea Island Red Pea & Kale Salad
The power of Instagram is bringing you this recipe, we had this salad last week for yet again another amazing lunch. After, I posted the picture to Instagram, people were asking for the recipe, so for this week’s Inside the Kitchen we have Sea Island Red Pea & Kale Salad. Enjoy!
1 ½ Red Peas
2 Tbsp. Hazelnut
4-6 Cups Vegetable Stock
2 Carrots peeled and sliced julienne
8 Radishes sliced
4 Scallions sliced thinly
2 Tbsp. chopped parsley
1 Tbsp. chopped tarragon
1 Zucchini, green part only, sliced julienne
1 Cup Roasted Hazelnuts
1 ½ Cup julienne cut kale leaves
4 Cloves garlic, minced
½ tsp. Dry Mustard
1 Tbsp. tarragon or cider vinegar
Juice of 1 lemon
1 tsp. sugar
2-3 T olive oil
Salt and fresh cracked pepper
Sauté red peas in hazelnut oil. Place in sauce pot and add stock. Simmer until tender. Remove, drain and cool.
Place in serving bowl and mix in carrots, radishes, kale, and top with dressing.
