Well, we are sorry to disappoint anyone who has such a colorful imagination, but as the only Colorado dude ranch with a membership in the prestigious Relais & Chateaux, we won't pussyfoot around the subject: our food is amazing.

People often wonder why our executive chef, Clyde Nelson, isn't in some big city. The answer is simple. Clyde is "allergic to cities." That is our great fortune. If he wasn't, his restaurant would be winning accolades in Manhattan, or San Francisco, or anywhere people value artful cuisine. But ever since his early days in Stowe, Vermont, as the gifted apprentice of Master Chef Anton Flory, Clyde has always been a high country chef, drawn to life in the mountains, and steeped in the culinary traditions of the Old World. Clyde filters his classical, slow food aesthetic through a New Western approach, drawing on the seasonal bounty of the Rocky Mountain region. He grows his own produce in the summer and sources his game as close to home as possible. As he puts it, "you have no idea how difficult we make it on ourselves here." By difficult, he means loving devotion to his craft. That's one reason why young, talented chefs from culinary institutes across the U.S. come to work here.
