Chunky Apple Walnut Cake ~ December 2010
2 1/2 cups vegetable oil
3 1/2 cups sugar
6 eggs
4 cups all-purpose flour
¼ teaspoon cloves
2 ½ teaspoon Cinnamon
½ teaspoon Mace
2 teaspoon Baking Soda
½ teaspoon Salt
2 cups Whole Wheat Flour
2 ½ cups Walnuts
6 ½ cups Coarse Chunks of Peeled Apples
6 Tablespoons Applejack
Preheat oven to 325 degrees. Beat vegetable oil & sugar until thick. Add eggs one at a time. Sift together all purpose flour, cloves, cinnamon, mace, baking soda and salt. Add whole wheat flour. Add dry ingredients to sugar/egg mix. Stir in walnuts, apples and apple jack.
Bake for one hour or longer.
Glaze:
2 ounces Butter
2 Tablespoons Brown Sugar
6 Tablespoons Sugar
3 Tablespoons Calvados
4 Tablespoons Cider
2 Tablespoons Orange Juice
2 Tablespoons Cream
Melt butter. Stir in sugar, add ingredients and bring to a boil. Cook 4 minutes. Glaze cake while warm.
